What’s better than a popsicle on a hot summer day in Houston? Now that the heat is starting to crank up, here is a recipe that will help you beat the heat and boost your protein intake! This popsicle has almost no added sugar and 5 grams of protein per popsicle. All you need is a popsicle mold, vanilla ready-to-drink protein shake, lime juice, and frozen mixed berries. It only takes about 5 minutes to prep the popsicle mixture and 2 hours of freezing time.
Yields 6 popsicles
Ingredients:
11 oz ready-to-drink protein shake (premier, Atkins, etc.)
½ -1 cup frozen mixed berries
1 tsp lime juice
Popsicle Mold
- you can find the reusable popsicle mold on any online store.
Directions:
- Combine all ingredients to the blender. Blend till smooth. May need to add water 1 tbsp. at a time to create a thinner consistency.
- Pour mixture into the popsicle molds and freeze for at least 2 hours.
To extract, run the mold under cool (not cold, not warm) water until the pop releases.
